Mediterranean Shrimp
Ingredients:
3 tbsp. olive oil
1-1/2 to 2 tbsp. minced garlic
1 c. chopped red onions
1 c. scallions, diagonally sliced into ½” pieces, white and green parts
1-½ to 2 c. peeled, seeded and diced tomatoes
3 tbsp. dry white wine
½ to 2/3 c. feta cheese
8-10 ozs. Bowtie pasta (or other bite-size pasta)
1 ½ lbs. Medium shrimp, peeled
1/3 c Kalamata olives
1 tbsp. butter
fresh ground black pepper
Heat 2 tbsp of the olive oil in a large skillet. Add the garlic, onions, and scallions, and sauté over medium heat for 2 minutes, stirring frequently. Stir in the tomatoes, raise the heat, and cook over high heat for 5 minutes. Stir in the wine and cook 1 minute longer. Remove from the heat and scrape into a large bowl. Stir in half the feta cheese; set aside.
Meanwhile, bring a large pot of water to boil, add the bowtie pasta and salt and gently boil until the pasta is al dente. Remove from the heat and drain.
In the same pan in which the sauce was cooked, heat the remaining tablespoon of olive oil. Add the shrimp, and sauté over medium-high heat until cooked through, about 2 minutes. Add the chopped olive and the sauce. Lower the heat and cook for 2 minute. Stir in the remaining feta cheese, the butter, and the pepper. Toss the sauce with the pasta. Serves 4.

An easy way to enhance the menu is to punch up the drink options during the Summer months. Additions such as fresh fruit, mint, and even basil can make a refreshing glass of sweet tea much sweeter. Guests will be encouraged to imbibe if options include an increasingly popular peach tea - make this irresistible with diced peach, possibly white peach once in season. You could use either fruit juices or chunks of fresh fruit for carafes of tea or lemonade. If using fresh fruits, try freezing before adding to the glass.
